Method
Pour a drizzle of oil into a frying pan and sauté the roughly chopped onion.
Add the already cleaned squid rings, deglaze with white wine, and let them cook for about 10 minutes.
Before turning off the heat, add the soy sauce and stir everything well.
Remove the squid rings from the heat and cut them into small pieces.
Pour the frozen peas into a pot of boiling water and let them cook for about ten minutes.
Drain the peas and immediately transfer them in cold water to preserve their bright colour.
Blend the peas with the mint leaves, add a tablespoon of tahini, salt, pepper, and oil. Place the hummus in a bowl and sprinkle with sesame seeds.
Serve the crostini with a spoonful of hummus, pieces of squid and a mint leaf.
